The Best Scallops: Downeast Dayboat

This month’s recipe for Wok Wednesdays is Ken Hom’s Stir-Fried Peppers and Scallops from “The Breath of a Wok.” We are only cooking one recipe in December because it’s such a busy time and this is a special dish that’s extra festive for the holidays. This past spring, a friend recommended I try Downeast Dayboat scallops. In New York I’ve been satisfied with the quality of scallops that I buy at the farmer’s market and local gourmet stores, so I didn’t understand why I should go to the trouble of ordering scallops that require being fedexed from Maine. I was Read More …

Jean Yueh’s Shanghai Shrimp

This month one of Wok Wednesdays featured recipes is Jean Yueh’s Shanghai Shrimp from “The Breath of a Wok.” I was planning on posting a little piece on Jean last week and had the idea that I would call her. It had been awhile since we last spoke and I thought she would enjoy knowing our group was about to cook her recipe. To my shock her phone number belongs to someone else. Auntie Frances told me recently, “He’s still cooking. We believe it’s important to keep moving and to keep busy. When we were first married, Uncle Sherman would come home from work, go straight into the kitchen, and change the ingredients I had Read More …

Beef and Broccoli

It’s a momentous day for Wok Wednesdays. After 4 1/2 years, we’ve stir-fried our way through over 100 recipes from “Stir-Frying to the Sky’s Edge.” Today is the very last recipe, Stir-Fried Beef and Broccoli. Wok Wednesdays began with an invitation from my friend Nancie McDermott for me to come to Chapel Hill, North Carolina, to do a book talk at Flyleaf Books. One evening in the spring of 2012, I remember scanning the room at Flyleaf and feeling a little disappointed that there weren’t more people in attendance. That’s when Matt Lardie came up to me and asked if Read More …
